This was my first attempt at any paleo cake. I was very pleased with the results. It actually rose a little, looked like cake, tasted like cake and was more or less cakey in texture, just wetter. I did eat it with honey on – I’ve not quite adjusted to a less sweet palette yet. I also made another cake and added raw cacao powder to it for chocolate banana cake, which was yummy.

Confession…. I was very un-paleo and used regular peanut butter!! I really need to have a go at making some almond butter. I’m told it is very easy, so no excuses!
