Tangy fish with veggie noodles

This was todays dinner and it tasted amazing! Fish and veg can be so bland and boring if you don’t add anything to it.

The fish was frozen basa fillets, which I baked in the oven in some foil, with fresh sliced ginger, and lime juice and and zest.

I used a peeler to make “noodles” from courgette and carrot. I steamed these for a few minutes as I don’t like them too crunchy.

When the fish was cooked I poured the juices into a saucepan with some coconut milk and heated it up to make a sauce.

The flavours were fresh and tangy, perfect with the fish. I will definitely be doing this again!
