Sardines

So my lovely hubby bought me a present yesterday – fresh sardines, with heads intact.

I have never prepared whole sardines before, so this was new to me! It is relatively simple, just rub the scales off, pull off the head, along with some of the insides, then cut open along the bottom and clean out the inside. You can either leave the bones in, or pull them out. I took out the spine but left most of the smaller bones.

I butterflied the sardines and then pan fried them in chilli and lemon juice. I also added spring onions, mange tout and beansprouts. I served it all on top of salad.
