Paleo Chocolate Tart

Family get togethers are great, but when given the task of providing puddings, and not wanting to compromise on a healthier outlook regarding food, it can be a challenge. Ok, so I could have made/bought a regular trifle or pie and not eaten it myself, but isn’t it nice to have something you can all enjoy together?

This is my own creation, influenced by various other recipes I have seen. I have previously made the filling to have as a chocolate mousse.

Chocolate Tart

For the base;
– 6 medjool dates
– 1 cup pecans
– half cup honey (or maple syrup if vegan)
– half cup cocoa powder

Blend dates and pecans until breadcrumb like consistency. Blend in cocoa, and add honey slowly until the mixture begins to stick and come up the sides of the blender. (You may not need to use all the honey).
Press into a pie/tart dish and place in the fridge to set.

For the filling;
– 1 ripe banana
– 1 ripe avocado
– 1 tablespoon honey/maple syrup
– 1 tablespoon cocoa powder
– 1/4 cup coconut milk (don’t shake the can, use the thicker cream off the top.)

Simply put all the ingredients in a blender, and blend until combined and creamy.
Spread over the tart base and return to the fridge until needed. Top with raspberries or whatever takes your fancy!

I made this a couple of hours before it was needed. There was some left which I tried two days later, and it was still ok, but had a much stronger banana taste, so probably best eaten the day you make it.
