We did a simple evaporation experiment with salt water.
First, mix some salt into water, with as much salt as will dissolve into the water.
Then pour some of the salt water into a dish, and leave it on a sunny windowsill.
Over a few days you will observe the water going down, and the salt particles starting to stick together.
What you end up with is a beautiful dish of salt crystals, and no water!
