Almond Butter

I really like peanut butter, and have been meaning to make a better alternative, so here it is!

I roasted about 2-3 handfuls of raw almonds for 10 minutes in a hot oven.

They were then blended with a bit of sea salt and a teaspoon of honey. This actually took quite a while as I didn’t really have enough mixture for the size of the blender! It kept sticking to the sides so it took a bit of scraping and blending until it combined.

It was very thick and stiff, not smooth like other nut butters, so I’m not sure if I needed to add something else or do something differently. It was almost like fudge, and would make an amazing nut fudge! It was amazingly yummy, I could happily sit and eat the lot!
