I was in need of something snacky that would curb my sugar/chocolate/grain cravings, and also suit the children and husband!
I came across a recipe for coconut flour chocolate chip cookies here; http://detoxinista.com/2013/08/coconut-flour-chocolate-chip-cookies-grain-free/
Here is my take on them:
Ingredients:
1/3 cup coconut flour
1/4 cup melted butter / coconut oil
1/4 cup honey
Pinch of salt
2 eggs
1/3 cup raw chocolate mulberry bits (from The Raw Chocolate Company) or chocolate chips
Mix all the ingredients together, adding in the chocolate mulberry bits last. This should form a soft dough.
Place spoonfuls of the dough onto a baking sheet. Shape them how you want them to turn out as they won’t spread or rise.
Bake for 15-20 mins at 180Β°c.
Leave to cool, and enjoy! I have no idea how long they last, as mine were eaten by the end of the day π
