I have been wanting to post this recipe for ages but I always forget to take pictures!
The pictures aren’t the best as I made these in the evening, and the lighting in my kitchen is not that great.
These are so yummy, and taste like… brownies! Best of all they are super easy to make too.
I came across the original recipe via pinterest, which you can find here;

I have tweaked the original to suit my preferences:
4 oz Dark chocolate (85% cocoa or higher)
2 med Sweet Potatoes (approx 400g), boiled or steamed
1/4 cup Unpasteurized Local Honey
3 Eggs
1/4 cup Cocoa Powder
1 tbsp Vanilla
1 tbsp Coconut Oil (or butter)
1 tsp Baking Soda
1/2 tsp salt
Steam or boil the sweet potato until soft. You can melt the chocolate in a bowl over the pan at the same time.
Place all the ingredients in a blender and pulse until smooth.
Pour into a tin and bake for approx 30mins until a knife comes out clean.
The brownies are quite “wet” so they wont keep more than a couple of days, but you will eat them all before that!

Just made a batch. Was a really easy recipe, which is always a winner with me! Very tasty, although I could detect the honey (not a honey fan), so another time I think I would try it with something else. Agave syrup??
Agave would work, or maple syrup if you like that. You could even try leaving out the honey altogether, as they should taste fairly sweet from the sweet potato.
