Roasted Tomato Puree

We have had an amazing crop of tomatoes. This was the first year we have grown them too! There were so many that we couldn’t possibly have eaten them all as they were, so I decided to make some tomato puree to put in the freezer.

I chopped them up and put them into roasting dishes with some coconut oil and a few cloves of garlic.

These went into a hot oven for about 30-40 minutes.

Once cooked, they were pushed through a sieve to remove the skins and seeds. Keep going until no more pulp comes out the bottom of the sieve.

The puree was then spooned into ice cube trays to put into the freezer. Once frozen they can be transferred into bags in the freezer.

In ice cube form they are handy as you can just take out as many as you need.
