Chocolate Raspberry Cake

Naughty Alert!! This is not Paleo, vegan, dairy, gluten or sugar free!!

But very yummy!!

I made this cake for my friend’s birthday this weekend. 4 layers of chocolate sponge with soft cheese frosting, raspberries and chocolate ganache.

Ingredients;

Cake:
-6 oz butter
-6 oz caster sugar
-3 eggs
-6 oz self raising flour
-2 oz cocoa powder
-1/4 cup of milk

-cream butter and sugar together, then mix in eggs, flour and cocoa.
-divide mixture into 4, then bake in a low oven to stop them rising in the middle.
-leave to cool

Frosting:
-2 packs soft cheese
-1/2 cup double cream
-1/4 cup icing sugar

-place ingredients in a blender and mix until fully combined and fluffy.

Chocolate ganache:
-3/4 cup double cream
-1 1/2 cups dark chocolate chips

– heat cream slowly in a pan until it starts to boil.
-take off the heat and mix in the chocolate

Assembly:

-layer the cakes with a filling of raspberries and frosting between each layer, and a final layer of frosting on top. Leave to set in the fridge for 30mins
– when the ganache has cooled slightly, spread this over the top of the cake, letting it slide down the sides in places.
-top with a couple of raspberries and sprig of mint.
