Brown Rice and Mixed Veg

Making healthy, filling lunches for my husband while he’s at work can be difficult. There are only so many salads that he wants to eat!

Today I have put together brown rice and mixed vegetables. Yummy and colourful!

Brown Rice is extremely good for you, compared with white rice which has very few benefits.

The benefits of brown rice include;

– Rich in Selenium
– High in Manganese
– Rich in Naturally Occurring Oils
– Rich in Anti-Oxidants
– High in Fiber
– Slow-Release Sugar
– Aids Digestion

Ingredients;

– 1/3 cup uncooked brown rice
– 1 onion
– 1 sweet potato
– 1 red pepper
– 1 handful mushrooms
– 1/2 cup sweetcorn
– 2 handfuls chopped baby spinach

While the rice is cooking in a pan of boiling water, lightly fry the onion in a pan with some butter or coconut oil.

Add the finely chopped sweet potato and let it cook for a few minutes to soften.

Next, add the pepper, mushrooms and sweetcorn. Also add some rock salt and pepper to taste.

Once all the vegetables are fully cooked add the chopped baby spinach and stir in until it has wilted.

When the rice is cooked, mix it all together. Either eat hot (yummy!) Or place in a container and leave in the fridge until you want to eat it 🙂
