Today it is cold and wet outside, and I’m not feeling 100%. I needed something warm and filling, healthy comfort food. Soup usually ticks all those boxes, and homemade chicken soup is great for fighting off those winter bugs!
I had a chicken carcass in the fridge from our roast a couple of days ago. There was still a bit of chicken left on the underside and on the wings, so I picked this off first and put to one side. I boiled the carcass and the juices from roasting which had set while in the fridge. Normally you would do this for a couple of hours, but I didn’t have that much time (before lunch!) so I just simmered it for 30 mins instead and it was fine.
I usually blitz all my soups and have them smooth, but I wanted this soup to be more chunky. I grated the carrot so that it would be in nice sized pieces to go into soup.
You could add other veg to it, and noodles if you want to make a chicken noodle soup.
Easy Chicken Soup
- 1 chicken carcass
- leftover chicken pieces
- 1 onion
- 2 cloves of garlic, finely chopped
- 1 large carrot, grated
Boil the chicken carcass for 30 mins or longer.
In a pan fry off the chopped garlic and half of the onion in some butter and add seasoning.
Grate the carrot and steam over the chicken stock.
Finely slice the other half of the onion.
Once the stock is ready, drain into another pan to sieve out the carcass.
Add the fried onion and garlic, chicken pieces, sliced onion and carrot to the stock.
Simmer for another 20 minutes until the sliced onion is soft.
Dish up; eat
