Hot Prawn Salad

20160301_121204_resizedToday I had planned on having prawn salad for lunch, but a cold salad wasn’t too appealing by the time it got to lunch, as I have been feeling the cold lately.

I decided to do a bit of a stir fry with them instead. I added a bit of chilli to add to the warming feeling. Quick, easy and full of flavour.

 

Hot Prawn Salad

  • 1 pack peeled and cooked king prawns
  • 1 large tomato
  • 1 cup kale
  • 1 tsp chilli flakes
  • 1 clove garlic
  • juice of 1/2 lime
  • 1/2 an avocado
  • 1 cup lettuce
  • 1 cup baby salad leaves

I finely chopped the garlic and began to soften it in a pan with some butter. Then I added the chilli flakes, chopped tomato and kale. I added the prawns just for a couple of minutes when the rest was nearly done.
Once cooked I laid this on top of some chopped lettuce and baby salad leaves, and sliced avocado.
A squeeze of lime juice on top brought it all nicely together.
