Balti-style Chicken with Brown Rice

Making tasty meals from scratch really isn’t that hard, you just need things in stock!

I have a large selection of spices in my cupboard, and I don’t really know what I’m doing with them most of the time, but having a look at a few recipes for inspiration can help. I rarely have all the “right” ingredients for a recipe that I have found, but there isn’t really a right and wrong when it comes to cooking. Just use what you have.

For this dish I used turmeric, coriander, cumin, ginger and chilli.

Garlic and onion are the base of a lot of my meals. They are easy to store, and add flavour as well as being good for you.

In the fridge I had courgettes and peppers, so these were what I used.

Start off by frying the garlic and onion in butter or coconut oil, then add the spices.

Chop up the chicken and add this to the pan. Once it is nearly cooked through, add the chopped vegetables.

Let them cook for a few minutes and then add a tin of chopped tomatoes.

Leave to simmer until everything is cooked to your liking.

Serve with brown rice 🙂
