These muffins are easy enough to make in the morning for breakfast. They are lovely eaten warm, and you could even spread some butter on them too! They are also great for packed lunches and after school snacks.
Ingredients:
2 1/2 cups oats
1 cup plain greek yogurt
2 eggs
1/2 cup honey
2 tsp baking powder
1 tsp baking soda
2 tbsp ground flax seeds
1 tsp vanilla
2 ripe bananas
Places all the ingredients in the blender and bend until smooth.
Spoon into muffin cases and bake for 20-30 mins at 180C.
*These work best in silicone cases as the mixture sticks to paper cases.
