Sometimes a salad just isn’t going to cut it. For those days when you want something a bit more filling and comforting, an omelette is a quick and easy fix. Add a load of veg and you have a hearty, healthy lunch.
For my omelette I fried off some onion, then added chopped pepper, tomato and mushroom. When these had cooked down I added sweetcorn and ripped baby spinach. I then poured over the beaten eggs and let it cook until set. This was served on a bed of baby spinach.
