These are my most baked item at the moment. My husband loves them for work as they are very filling due to their high protein content. They are usually gone within a couple of days.
These cookies are great as they are so quick and easy to make.
Ingredients:
1 tin green lentils
1 cup cashew butter/other nut butter
1/2 cup maple syrup or honey
Vanilla essence
1 tablespoon cacao powder or cocoa powder
4 medjool dates
Put all the ingredients in the blender and pulse until smooth.
Put spoonfuls on a baking tray and flatten them down.
Bake at 180C for 15-20 mins.
