Sometimes you just want something sticky, stodgy and chocolatey to eat. I confess that I am a comfort eater, so I try to find recipes that bring comfort without all the bad stuff.
These brownies are lovely and squidgy, really chocolatey, and have an amazing icing on top. You have to try making these!
Ingredients:
1 cup hot water
1/2 cup coconut oil
1/3 cup nut butter
2 tsp vanilla extract
3 tbsp milled flaxseeds
1 cup grated courgette
3/4 cup cacao
1 cup coconut flour
1/2 tsp salt
1/2 tsp baking soda
1/2 cup honey or maple syrup
Icing:
1 cup coconut cream
1 tbsp cacao
1 tbsp honey
In a bowl, pour the hot water over the coconut oil to melt it. Mix in the nut butter, vanilla extract, courgette and milled flaxseeds. When combined, leave to sit for a few minutes so the flaxseeds can absorb some of the water.
Next mix in the cacao, coconut flour, salt, baking soda, and honey.
Pour into a lined tin and bake for 30-40 mins at 180C.
For the icing: Mix together the coconut cream, honey and cacao. Spread on the brownie when it is cooled, and place in the fridge so the icing can set.
