Cauliflower crust pizza

One junk food that I still keep getting cravings for is pizza! The flyers that come through the door every week don’t help either.

I decided to try having a go at making cauliflower crust pizza, as I have seen it floating around on pinterest, and it looks pretty good.

I was not disappointed! This pizza really tastes of pizza! My husband didn’t even realise it was cauliflower.  I’m not sure you can call it healthy with the amount of cheese involved,  but a better alternative to takeaway pizza for a treat!

I looked at a few different recipes and adapted them to suit my preferences.

Ingredients:

Base
– 1/2 large cauliflower
– 2 cups grated cheddar cheese
– 2 eggs
– mixed herbs, salt + pepper

Toppings (choose what you like)
homemade roasted tomato puree
– chorizo
– sweetcorn
– peppers
– mushrooms
– grated cheddar cheese

Break up your cauliflower into florets, and then place a few at a time into a blender to make them into “rice”.

Place the cauliflower rice in a frying pan and gently cook with a little water if necessary, until soft.

Place the cauliflower rice in a tea towel or cheese cloth and squeeze until all the liquid has come out.

In a bowl, mix the cauliflower rice, cheese and herbs until well mixed, then add the eggs. Mix well, and then on a baking tray, arrange in the shape you would like your base to be.

Cook in the oven until it starts to brown slightly (about 30mins depending on how wet the mixture is). Turn over and cook for another 10 mins.  If you like a crispy pizza base, cook for longer at this stage.

Now add your toppings. I used some homemade roasted tomato puree from the freezer, and added some extra herbs.

When you have put all your toppings on, place back in the oven until cooked to your liking.

 

Cut up and eat! Perfect pizza.
