It’s January.
It’s winter.
It’s cold.
I don’t enjoy winter time. Yes, there are some nice things, like frosty mornings when everything sparkles, and the occasional snowy flurry, but mostly in England it is cold, damp, dark and dreary. I wake up in the morning and just want to stay in bed.
Healthy eating in the winter months can be hard. Salads and juices just don’t cut it. Some warming winter comfort food is what’s needed to get you through.
This is a hearty, filling, bean and mushroom casserole. I added some roasted sweet potato for the added sweetness and texture.
Ingredients
- 1 medium sweet potato
- 1 onion
- 1 red onion
- 2 garlic cloves
- 1 tin mixed salad beans
- 1/2 cup chopped mushrooms
- 1/2 pint gravy
Serve with fresh steamed vegetables
