I fancied trying something a bit different, to do as well as to eat, and sushi has always seemed appealing. It is definitely not paleo with all that rice, but I’m not 100% paleo yet so its allowed π
I don’t like raw fish, and my lovely companion for the evening is vegetarian, so we made vegetable sushi.
It was great fun, but much harder to make than it looks! I think there is quite an art to it. The rice must be spread out evenly (and sticky enough), or you end up with a lumpy seaweed “sausage”. The rolling is the hardest bit. We were using tea towels rather than bamboo mats, do maybe that didn’t help.
For the filling we used pepper, cucumber, tomato and mushroom.
We were both very pleased with the results. I think I will try it again soon, and hopefully improve my technique!


I have seen sushi made with cauliflower rice – maybe try that next?
That’s an idea to try. Do you think it would be sticky enough?
I do not remember the exact recipe, but I think it adds some vinegar or rice syrup to make it a little stickier.
